1. Many people think: if you eat frozen fish, that's stroganina for you. This is wrong. Not every fish is suitable for stroganina. The best are broad whitefish, omul, nelma, sturgeon, muksun. True, if necessary, you can make stroganina from char, taimen, peled, even from vendace. But you should know some rules.
2. Only “live”, not “asleep” (that is, not dead in the nets) fish goes to the stroganina. This is the first. Feeding a guest a sliced fish is considered an insult. Secondly, having taken the fish out of the net, it is necessary to hit its head hard on the ice. After the fish lies in the cold for 15-20 minutes, it should be slightly kneaded, ruffled and straightened, and then completely frozen. After 10-12 hours in the cold for 30 degrees, you can cook a dish from it.
