Her transparent creations are more like heavy glass products with flowers inside. Jelly 3D cakes (as they are called) are made of gelatin, and complex patterns are drawn using special tools that inject color.
Boone Cakes are a great example of how food turns into art. Sue became interested in making 3D jelly a few years ago, when a neighbor of her mother brought such a cake. The dessert intrigued Boone so much that she signed up for a cooking course with a famous teacher of the art of 3D jelly in Malaysia (such exist, it turns out). The confectioner opened her own business in Sydney, Jelly Alchemy (translated as "jelly alchemy").
So, what is a jelly cake made of? First, jelly of different colors is heated to bring it to a liquid state, then it is introduced into a transparent base with the help of special tools. After decorating, a layer of jelly with taste is added on top.
