However, even they hardly know the behind-the-scenes secrets of restaurant cuisine. But the whole background is well known to the chefs working in these hottest kitchens. They are the ones who will tell us today what you should never order in a restaurant and why.
Hollandaise sauce
Eggs Benedict with hollandaise sauce
Famous American chef Anthony Bourdain admitted that he does not know a single colleague who would prepare hollandaise sauce after ordering. Usually it is made in advance and cleaned, like many other blanks. The problem is that the delicious sauce is very fond of bacteria and it needs to be stored in strict conditions at a certain temperature. And such conditions are not met by all.
Fish on Mondays
Usually, the fish markets for which Asian countries are so famous do not work on Saturdays. So all they sell on Sunday and Monday is the catch of Thursday and Friday. You can imagine what lives there until the beginning of the working week.
Chicken
Many people choose chicken dishes because they are very difficult to spoil. But restaurant customers do not think about the amount of chemicals, hormones and antibiotics that can be in the chicken. Today, you can order dishes from other birds — for example, quail or guinea fowl. And at home, you can cook chicken from the farm, in which you are sure.
Non-specialized dishes
Often you can see how visitors, for example, a Japanese restaurant wants pasta or a burger. If you come to a Japanese restaurant, order what it specializes in. Why go to a burger joint and grab a modest salad or pasta? In such places, these dishes are included in the menu only to please everyone. And it's easy to guess that non-core dishes will be so-so.
So if you want pasta, go to a restaurant with the right cuisine.
Seafood
Seafood is generally a dangerous thing and an extremely capricious product. If you are not sure about the quality, origin or freshness, do not take them in any case. For example, in the United States, a third of seafood is sold with the wrong label.
Wagyu and kobe
Wagyu is the common name of several breeds of cows, the meat of which is highly valued and very expensive. And kobe is a premium quality beef obtained from Japanese black bulls. Moreover, meat is not exported outside of Japan, so everything that is sold outside the country has little in common with the real kobe.
Many restaurants, in order to give themselves respectability and exclusivity, as well as earn more, include wagyu or kobe meat dishes on the menu. Needless to say, what you will be served may not be kobe at all. It is better to take a rib eye from Angus — you will not lose.
Oysters
According to statistics, over the past five years, cases of shellfish poisoning have been recorded much more than in two decades. Perhaps this is due to the warming of the water in the World's oceans — as you know, bacteria multiply faster in a warmer environment. Or the fashion for oysters has reached its apogee. In any case, oysters should be taken only in a proven place on the sea coast. If God forbid you get poisoned, remember this for the rest of your life.
Delicacies
In fact, there is no special sense to take delicacies in the restaurant. Even in a specialty store, these very delicacies will cost you much less, plus they will be enough for several dishes. So think again before ordering another masterpiece topped with a spoonful of caviar or truffle flakes.
Original dishes
Not all traditional dishes from the past are worth trying. Even if you've heard a lot about them and seen them on different menus. For example, a hash of corned beef-a dish that was invented in wartime, because beef was given out rationed. In fact, you order canned beef for breakfast, while the menu is full of dishes made from fresh and delicious products.
Everything you can cook at home
Once you're out in the world to have lunch at a restaurant, don't order a dish that you often eat at home just because it's your favorite. Try something new that will make you wonder and blow up your taste buds. It doesn't have to be something trendy with crazy combinations, it's enough that you've never tried it.
